Zesty Leek Salad with Pine Nuts

Ingredients
zest from 1 Paramount Citrus lemon
juice from 2 Paramount Citrus lemons
5 medium leeks, washed, cleaned and cut into 4-inch chunks
1 onion, finely sliced
1 carrot, finely sliced
1/3 cup pine nuts, crushed
1/3 cup extra virgin olive oil
salt and pepper to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• Put leeks and lemon zest in boiling water and boil for 3–5 minutes; drain well and set aside.
• In a medium bowl, gently mix together drained leeks, onion and carrot slices and pine nuts.
• Toss with olive oil, fresh lemon juice, salt and pepper.
