Zesty Fish Croquettes

Ingredients
CROQUETTE
Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemon
1 lb. white fish fillets
2 tablespoons olive oil
1 bunch green onions, chopped
1 bunch flat leaf parsley, chopped
1 clove garlic, crushed
3 tablespoons fresh thyme leaves, chopped
½ tablespoon capers, rinsed and chopped
1 egg, beaten
Salt and pepper to taste
FRYING
2 Paramount Citrus lemons, sliced to garnish
1 egg, beaten
Plain, fine breadcrumbs
Oil for frying
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• Slice two lemons; set aside.
• In a large skillet, heat 2 tablespoons olive oil and sear fish on both sides until flakes easily with a fork.
• In a large bowl, mix all croquette ingredients including the fish which has been flaked.
• Cover and refrigerate for 1-2 hours.
• Form the mixture into small croquettes.
• Beat 1 egg in a plate.
• Pour breadcrumbs onto another plate.
• Dip croquettes first in egg and then breadcrumbs.
• Deep fry in batches until golden browned.
• Garnish with lemon slices.
• Can be served with Citrus Tartar Sauce.
