Warm Carrot Salad with Lemon Yogurt Dressing

Ingredients
Zest of 1 lemon
Juice of 2 lemons
4 medium carrots, grated
1 cup plain non-fat yogurt
2 cloves garlic, mashed
4 tablespoons olive oil
2 tablespoons fresh parsley, chopped
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large pan heat olive oil and sauté carrots over low heat for 10 minutes.
• Let cool for 10 minutes.
• In a large bowl mix carrots, yogurt, garlic, fresh lemon juice.
• Season with salt to taste.
• Sprinkle parsley over the salad and serve.
