Ingredients

Zest from ½ Paramount Citrus orange
Juice from 1 Paramount Citrus orange
2 cups fresh frozen green beans, cooked and drained
1 can kidney beans, drained and rinsed
1 can garbanzo beans, drained
½ cup red onion, finely diced
¼ cup fresh cilantro chopped
4 radishes, sliced fine
2 garlic cloves, minced
¼ cup olive oil
1 teaspoon cumin
¼ teaspoon cayenne pepper
Salt and pepper to taste

Directions

• Zest half of an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• In a large bowl, mix together all beans, red onion, cilantro and radish.
• In a small sauce pan, combine olive oil, cumin garlic, cayenne pepper over medium heat and cook until fragrant and garlic is soft. Remove from heat immediately.
• Toss flavored oil with salad.
• When cool, stir in orange juice and zest.
• Add salt and pepper to taste.
