Thai Lemon Mushroom Soup

Ingredients
Zest from2 Paramount Citrus lemon
Juice from 3 Paramount Citrus lemon
2 tablespoons olive oil
6 green onions, cut into chunk
1 carrot, sliced
1 chili pepper, chopped
2 slices of fresh ginger
2 cups mushrooms, sliced
1 boneless chicken breast, cut into cubes
¼ cup fish sauce or 1 pack Thai seafood curry mix
4 cups chicken stock
1 cup coconut milk
Salt and pepper to taste
Directions
• Zest two lemons using a zester or a fine grater; set aside.
• Juice three lemons with a citrus reamer or juicer; set aside.
• In a large pot sauté green onions, carrot, chili pepper and fresh ginger for 2-3 minutes.
• Add chicken and continue to sauté for 2 minutes.
• Add mushrooms and fish sauce and simmer to reduce the sauce for 3-5 minutes.
• Add the chicken broth and bring to a boil.
• Add milk, lemon zest and fresh lemon juice.
• Cook for an extra 3-5 minutes whisking constantly.
• Season with salt and black pepper to taste.
