Sweet Potato And Dried Cherry Salad with Lemon Vinaigrette

Ingredients
Olive oil to drizzle
5 Sweet potatoes cut into a medium dice
½ c. dried cherries
3 tbsp. coarsely chopped cilantro
2 cloves garlic, crushed or finely minced
Juice of 3 lemons
1/3 c. olive oil
1 small red onion, finely diced
1 tbsp. sugar
Salt and pepper to taste
½ c. coarsely chopped pecans
Directions
Toss the sweet potato in olive oil and then place the cubes on baking sheets. Bake at 350 degrees Fahrenheit until the potatoes are fork tender. In a large bowl combine all other ingredients, except the salt and pepper. Add the sweet potatoes and toss. Salt and pepper to taste and serve. Can be enjoyed hot or cold.
