Stir Fried Tofu With Blood Orange And Mushrooms

Ingredients
Zest from ½ Paramount Citrus blood orange
Juice from 1 Paramount Citrus blood orange
1 Paramount Citrus blood orange supreme segmented* and cut into cubes
½ lb. extra firm tofu, cut into bite size pieces
4 tablespoons oil
1 large onion, sliced
6 green onion sprigs, sliced
½ lb. mushroom, sliced
1 teaspoon sugar
1 tablespoon soy sauce
1 teaspoon ginger, grated
1 teaspoon sesame seeds, toasted
½ tablespoon cornstarch

Directions
• Zest half of a blood orange using a zester or a fine grater; set aside.
• Juice a blood orange with a citrus reamer or juicer; set aside.
• *Supreme segment a blood orange. Cube segments and set aside.
• In a large skillet or a wok, heat 2 tablespoons oil and stir fry tofu and set aside.
• In the same skillet add the remaining 2 tablespoons oil and sauté onion, green onions and mushrooms.
• Add orange zest, fresh orange juice, orange segments, sugar, soy sauce, ginger, sesame seeds and cook over medium high-heat for 1-2 minutes.
• Add cornstarch, stir constantly to thicken the sauce.
• As soon as the add tofu and stir well to heat through.
• Serve immediately with brown rice.
