Seared Tuna with Citrus Relish Quick

Ingredients

ORANGE-GRAPEFRUIT RELISH
Juice from 1 Paramount Citrus lemon
1 Paramount Citrus grapefruit, supreme segmented* and cut into cubes
1 ½ Paramount Citrus orange, supreme segmented* and cut into cubes
1 tbsp olive oil
2 teaspoons vinegar (sherry or white wine vinegar)
2 tbsp red onion, chopped
1 Heirloom tomato, diced (or your favorite tomato)
Salt and black pepper to taste
2 tbsp fresh parsley, chopped
1 small avocado, chopped
½ small jalapeno, finely chopped and deseeded (optional)
Salt and pepper to taste

4 fresh tuna steaks (3/4 inch thick), rinsed and pat dried
1 tbsp olive oil

Directions

ORANGE-GRAPEFRUIT RELISH
• Juice a lemon with a citrus reamer or juicer; set aside.
• Supreme segment* a grapefruit. Cube segments and set aside.
• Supreme segment* one and a half oranges. Cube segments and set aside
• In a medium bowl mix, olive oil and vinegar. Whisk well.
• Add red onion, diced tomato, orange and grapefruit and mix well.
• Add salt and pepper to taste.
• Sprinkle with fresh parsley and set aside.

• Season tuna steaks with salt and pepper.
• In a large skillet heat 1 tbsp olive oil.
• Sear tuna steaks for about 8-10 minutes, turning once when the steak lifts easily off the pan.
• Before serving add avocado to the relish and taste for seasoning.
