Salmon Carpaccio

Ingredients
Juice from 2 Paramount Citrus lemons
Juice from 1 Paramount Citrus orange
½ lb. salmon, sliced as thin as possible
4 tablespoons extra virgin olive oil
1 teaspoon sugar
1 teaspoon dill, minced
1 teaspoon basil, minced
Salt and black pepper to taste
1-2 scallions, chopped fine, to garnish
2 medium cucumber, sliced longwise
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• In a medium bowl whisk together all ingredients except salmon and scallions.
• Place salmon slices on a big flat serving plate.
• Pour citrus sauce over salmon, cover and refrigerate at least 1-2 hours to marinate.
• Garnish with scallions and serve on cucumber slices.
