Roasted Red Pepper Packages Vegetarian

Ingredients

Juice from 2 Paramount Citrus lemons
6 red peppers
6 green onions
1 cup feta cheese, crumbled
½ cup fresh parsley, chopped
2 tablespoons walnuts, crushed
2 tablespoons olive oil
Salt and pepper to taste

Directions

• Preheat oven to 400°F
• Juice two lemons with a citrus reamer or juicer; set aside.
• Place peppers on a baking sheet and roast for 30-45 minutes turning each side every 10 minutes until partially charred.
• Meanwhile in a medium bowl mix together feta cheese, parsley, walnuts, salt and pepper to taste.
• Blanch green onions in boiling hot water to soften and remove immediately.
• Remove peppers and place them in a Ziploc bag or a bowl covered tightly with plastic wrap. Allow to cool for 15 minutes. This will also loosen the skin, making easier to peel.
• Peel and seed peppers and cut into half.
• Place cheese mixture in each pepper slice and roll up the peppers.
• Tie rolls with green onion leaves, forming little packages.
• Place rolls in a serving plate.
• In a small bowl whisk together fresh lemon juice, olive oil, salt and black pepper.
• Pour over rolls and serve.
