Roasted Peach And Blood Orange Salsa

Ingredients
6 peaches
1 tbsp. extra virgin olive oil
4 blood oranges, *segment supremes
1 c. fine diced vidalia onion
2 c. small diced roma tomatoes
1 tbsp. apple cider vinegar
2 tbsp. cilantro, finely chopped
1 tbsp. chives, finely chopped
½ tsp. cayenne pepper
Pinch of cinnamon
Salt and pepper to taste

Directions
Pre-heat the oven to 350 degrees Fahrenheit. Slice the peaches in halves and remove the seeds. Sprinkle peaches with salt, pepper, and olive oil. Roast until soft and the juices begin to be released. Toss all other ingredients into a bowl. Be sure to slice each supreme into three smaller segment pieces. Chop the peaches into a medium dice and add them to the mix. Let flavors marry for two hours and serve with your favorite tortilla chip, mahi mahi taco, or on the side of a Camembert cheese quesadilla.
