Ingredients

Zest from 1 Paramount Citrus blood orange
Juice from 2 Paramount Citrus blood oranges
Juice from 1 Paramount Citrus lemon
4 medium beets
2 red onions, sliced fine
4 tablespoons extra virgin olive oil
½ tablespoon sugar
1 tablespoon fresh chives, chopped
1/3 cup goat or feta cheese, crumbled
1 blood orange *supreme segmented
Kosher salt

Directions

• Preheat oven to 275°F.
• Zest a blood orange using a zester or a fine grater; set aside.
• Juice two blood oranges with a citrus reamer or juicer; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• Wrap beets in foil and bake for 40-45 minutes until tender and the beets start to separate from the skin.
• While beets cool, in a small bowl whisk together olive oil, fresh orange and lemon juices, orange zest and sugar.
• Slice beets with or without the skin.
• In another bowl, mix together beets, orange segments and onion slices.
• Toss beets with the dressing.
• Top with chopped chives and sprinkle with kosher salt.
