Red Orange Salad

Ingredients
Zest from ½ Paramount Citrus orange
Juice from 1 Paramount Citrus orange
4 Paramount Citrus oranges supreme segmented* and cut into cubes
1 large red onion, sliced into rings
1 carrot, sliced fine
1 red bell pepper, sliced
2 teaspoons brown sugar
4 tablespoons extra virgin olive oil
2 tablespoons wine vinegar
½ cup loosely packed fresh parsley, chopped
1 teaspoon ginger, minced
Salt and pepper to taste

Directions
• Zest half of an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• *Supreme segment four oranges. Cube segments and set aside.
• In a salad bowl, mix orange segments, onion and carrot.
• In another small bowl whisk together fresh orange juice, orange zest, sugar, olive oil, vinegar, parsley and ginger.
• Toss salad to coat with dressing.
• Cover and refrigerate for 30 minutes, to allow flavors to blend.
• Season with salt and pepper to taste and serve.
