Red Onion and Lemon Chutney

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from1 Paramount Citrus lemon
1 red onion, chopped
2 cloves garlic, minced
1 teaspoon olive oil
½ tablespoons ginger, grated
¼ teaspoon cumin powder
¼ teaspoon chili powder
¼ teaspoon freshly ground black pepper
Salt to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• In a medium sauce pan, place all the ingredients.
• Bring to a boil over medium-high heat, stirring constantly.
• As soon as it comes to a boil remove from heat.
• Let chutney cool.
• Place chutney in jars, seal the lids very tight and store in the refrigerator up to 2 weeks.
