Red Cabbage Salad

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 2 Paramount Citrus lemons
1 small red cabbage, shredded
1 red onion, sliced
2 carrots, grated
5 radishes, sliced fine
1/3 cup extra virgin olive oil
Salt and pepper to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• Place red cabbage in hot water for 5 seconds, drain and set aside.
• In a salad bowl, combine cabbage, onion, carrots and radishes.
• In a small bowl, whisk together lemon zest, fresh lemon juice and olive oil.
• Toss salad with dressing.
• Season with salt and pepper and serve immediately.
