Rappini Lemon Pasta

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 2-3 Paramount Citrus lemons
1 lb. penne pasta
¼ cup extra virgin olive oil
1 garlic clove, minced
1 bunch broccoli rappini, trimmed
½ cup pitted kalamata olives
2 tablespoon fresh oregano, chopped
Feta cheese to taste, crumbled
Salt to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice three lemons with a citrus reamer or juicer; set aside.
• In a large skillet heat olive oil and sauté green onions and garlic over medium heat.
• Add rappini and sauté for 3 more minutes.
• Add olives, lemon zest and fresh lemon juice and simmer for 5 minutes.
• Meanwhile, in a large pot cook pasta according to instructions.
• Add sauce into the pot and toss well with pasta.
• Sprinkle with salt and fresh oregano.
• Serve pasta topping with feta cheese to taste.
