Pork Stir Fry With Orange Sesame Snow Peas

Ingredients
1c. jasmine rice
2 c. water
1 tbsp. sesame oil
3 cloves garlic, minced
1 shallot, diced
1 tsp. rice wine vinegar
3 oranges, zest 2, juice 1, *supreme segment 2
2 c. thinly sliced, cooked pork
2 c. snow peas
1 c. yellow tear drop tomatoes, halved
2 tbsp. soy sauce
½ tsp. salt
Pinch cayenne pepper

Directions
Place the rice in a pan with water. Bring to a boil, then stir, reduce to a simmer and cover. Cook until rice is desired doneness. In a saute pan, on medium high heat add the sesame oil. When hot, sweat the garlic and shallot. Add the rice wine vinegar, soy sauce, and the orange juice. Add the pork. A minute later, add the snow peas, tomatoes, orange segments, and zest. Add salt and pepper to taste. Serve over jasmine rice.
