Orange, Tuna and Tomato Pasta

Ingredients
Zest from 1 Paramount Citrus orange POTATO
Juice from 3 Paramount Citrus oranges
1 lb. penne pasta
1 onion, chopped
1 celery, chopped
1 clove garlic, minced
1 can tuna in oil
1 lb. fresh tomatoes, diced or can diced tomatoes
10 olives, pitted and roughly chopped
½ cup fresh parsley, chopped
Ground black pepper to taste
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice three oranges with a citrus reamer or juicer; set aside.
• Boil pasta in a large pot and cook according to instructions.
• Meanwhile, sauté onion, celery and tuna for 3-5 minutes.
• Add the tomatoes, fresh orange juice, orange zest and garlic and simmer for 3 minutes.
• Sprinkle the sauce with fresh parsley and black pepper.
• Add pasta to sauce.
• Cook for 2-3 minutes until pasta is heated through.
