Orange Tomato Soup

Ingredients
Zest from 1 Paramount Citrus orange
Juice from 2 Paramount Citrus oranges
4 tablespoons butter, unsalted
½ onion, chopped fine
1 carrot, diced
1 ½ lbs. tomatoes, chopped
3 cups chicken or vegetable stock
½ cup heavy cream
½ teaspoon black pepper
Fresh mint leaves to garnish
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• In a pot, melt butter and sauté onion and carrot until tender.
• Add tomatoes, cook until tomatoes are softened.
• Add stock, fresh orange juice, orange zest and cream.
• Bring to a boil stirring constantly.
• Lower heat, season with black pepper and cook for a few more minutes.
• Ladle into bowl, serve garnished with fresh mint leaves.
