Orange Scented Brussels Sprouts

Ingredients
Extra virgin olive oil
1 c. Vidalia onion, finely chopped
5 c. fresh cleaned brussel sprouts
½ tsp. kosher salt
4 oranges: juice 1, zest all 4, and *supreme/segment 2
1 tbsp. tarragon, finely chopped
1 tbsp. unsalted butter, cold
Salt and pepper, to taste
2 tbsp. Parmesan, grated

Directions
Heat pan to med-high and sauté the Vidalia onion in olive oil until caramelized. Add the brussel sprouts and kosher salt. Add the orange juice and turn heat down and simmer on low. When the brussel sprouts are fork tender add the orange zest and tarragon. Remove the pan from the heat. Stir in the butter, salt and pepper to taste. Serve the brussel sprouts immediately, sprinkled with a dusting of Parmesan cheese.
