Orange Salmon Burger

Ingredients

Zest from 1 Paramount Citrus orange
Juice from 1 Paramount Citrus lemon
1 Paramount Citrus orange supreme segmented* and cut into cubes
1 lb. fresh skinless salmon fillet
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped
2 tablespoons scallions, chopped
1 small egg, beaten
¼ cup seasoned breadcrumbs
Pinch of salt and pepper

Directions

• Zest an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• Supreme segment* an orange. Cube segments and set aside.
• Finely dice the salmon until it is almost minced.
• In a large bowl, using your hands mix all ingredients well.
• Form the mixture into 4 large flat patties.
• Refrigerate for 1-2 hours to set well.
• Heat oil in a large skillet over medium heat.
• Cook patties turning each side until crusty.
• Serve on rolls with your choice of lettuce, onion, tomato and Spicy Orange Mayonnaise

These are really easy -- I didn't exactly supreme segment the oranges and it didn't really matter -- I just cut them into cubes
