Orange Rice Pudding

Ingredients
Zest from ½ Paramount Citrus orange
Juice from 3 Paramount Citrus oranges
2 cups milk
½ cup medium grain rice cooked
Pinch of salt
½ vanilla bean
¼ cup sugar
Pinch of cinnamon
½ cup almond, crushed
Directions
• Zest half of an orange using a zester or a fine grater; set aside.
• Juice three oranges with a citrus reamer or juicer; set aside.
• In a sauce pan, combine milk, rice, salt and orange zest and scrape in the seeds of the vanilla bean.
• Cook over low heat, stirring occasionally, until rice is soft and milk is absorbed for about 20 minutes.
• Combine cooked rice with orange juice, sugar and cinnamon.
• Let cool and pour into serving bowls, sprinkle with crushed almonds.
• Cook until juice is heated through and sugar is dissolved.
• Refrigerate and serve chilled.
