Orange Poppy Seed Shortbread

Ingredients
1 ¼ c. all purpose flour
3 tbsp. sugar
½ c. butter
1 tbsp. poppy seeds
1 tsp. finely chopped orange zest
½ tsp. vanilla extract
Directions
Combine flour and sugar. Cut in butter and poppy seeds. The key is to form fine crumbs, not mix these ingredients entirely. When it forms fine crumbs add the zest and vanilla and knead into a smooth dough. On an ungreased cookie sheet, roll the dough into an 8” circle. Press pointer finger and thumb around other thumb on edge of the dough to make a scalloped edge making a wave like pattern; or take a fork and make gentle indentations around the outer edge. Cut the circle into 16 pie shaped wedges. Leave the wedges in a circle and bake at 325 degrees Fahrenheit until the bottom just begins to brown. Cool for 5 minutes in a cookie sheet, and then transfer to a wire rack to complete cooling. Break apart into pie shaped cookies and serve (excellent with Orange Scented Drinking Chocolate).
