Orange Marmalade

Ingredients
4 Paramount Citrus oranges, washed well and quartered
juice from 8 Paramount Citrus oranges
juice from 3 Paramount Citrus lemons
5 cups water
6 cups granulated sugar
Directions
• Juice eight oranges and three lemons with a citrus reamer or juicer; set aside.
• Slice orange quarters lengthwise as thin as possible.
• In a large saucepan over medium-high heat, mix together fresh orange juice and lemon juice.
• Add 5 cups water and the orange slices; bring to a boil.
• Reduce heat and simmer for about 1-1/2 hours, until oranges are translucent.
• Add sugar and bring the mixture to a boil again, stirring constantly until the sugar is dissolved.
• Cook, stirring often, until the marmalade thickens and sets.
• Test the marmalade by pouring a little bit onto a plate. If it wrinkles when you press it, it is done.
• Ladle into hot jars and place the jars in boiling water for 10–15 minutes.
• It takes up to 1–2 weeks for the marmalade to set and thicken. It can last up to 18 months, refrigerated.
