Orange Lentil Soup Vegetarian

Ingredients

Juice from 2 Paramount Citrus oranges
2 onions or shallot, diced
2 tablespoons butter or olive oil
2 carrots, sliced
2 celery stalks, sliced
1 cup red lentils
5 cups chicken or vegetable stock
2 tablespoons fresh mint, chopped
1 bay leaf
Salt and pepper to taste

Directions

• Juice two oranges with a citrus reamer or juicer; set aside.
• In a large skillet melt butter and sauté onion or shallot
• Add carrots and celery and sauté for 4-5 minutes.
• In a large pot combine lentils, stock, orange juice, orange zest, salt and pepper to taste.
• Add vegetable sauté and bay leaf as well.
• Cover the pot and simmer for 1 hour, until lentils are tender.
• Remove bay leaf and discard.
• Let soup cool and blend with a hand blender until smooth.
• Garnish with fresh mint and reheat soup before serving.
