Orange-Lemon Schnitzel Rolls

Ingredients
Zest from 1 Paramount Citrus orange
Zest from 1 Paramount Citrus lemon
Juice from 2 Paramount Citrus oranges
Juice from 1 Paramount Citrus lemon
6 pieces thinly sliced and pounded beef steaks
2 finely diced onions
1 finely diced bell pepper
½ bunch fresh parsley
2 cups fresh breadcrumbs
Salt and black pepper to taste
Extra chopped fresh parleys and green onions to taste
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• Preheat oven to 375°F.
• In a large bowl mix breadcrumbs, orange and lemon zest, fresh parsley, diced onions and bell pepper.
• Add the fresh lemon juice, salt and pepper into the mixture.
• Divide the mixture evenly between the steak pieces.
• Roll up the steaks and place a tooth pick in the middle to hold them together.
• Place the rolls in a lightly greased oven proof dish.
• Pour the fresh orange juice over the rolls.
• Bake at 375 F for 40 minutes.
• Sprinkle with fresh parsley and green peppers.
• Bake 10 more minutes.
