Orange Lemon Frosting

Ingredients
juice from 4 Paramount Citrus oranges
juice from 1/2 Paramount Citrus lemon
zest from 1 Paramount Citrus orange
2 cups granulated sugar
2 egg whites, beaten just until soft peaks form
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice four oranges and half a lemon with a citrus reamer or juicer; set aside.
• In a large bowl, combine all ingredients.
• Mix with an electric mixer at medium speed for 1 minute.
• Increase the mixer speed to high and beat for 3 more minutes until icing becomes thick.
• Use immediately. (To use later, cover the surface with a dampened paper towel and cover the bowl with plastic wrap. Can be stored chilled for 1 day.)
