Orange, Jalapeno and Shrimp Pasta

Ingredients
Juice from 2 Paramount Citrus oranges
5-6 tablespoons olive oil
12 ounces pasta
20 large peeled shrimp
2 tbsp onion, chopped
½ cup celery, chopped
1 small jalapeno, minced and seeded
½ cup white wine
½ cup heavy whipping cream
Salt and pepper to taste
Chopped fresh parsley to taste
Directions
• Juice two oranges with a citrus reamer or juicer; set aside.
• Put olive oil in a large skillet.
• Add shrimp and cook until both sides get just pink(2-3 minutes).
• Transfer shrimp onto a plate and refrigerate.
• Add onion, celery and jalapeño and saute for 1-2 minutes, until soft.
• Add the wine, fresh orange juice and whiping cream and bring to a boil about 15 minutes, until sauce is reduced.
• Sprinkle with salt and pepper to taste.
• Cover the sauce and refrigerate as well for 3-4 hours or overnight.
• Cook the pasta according to instructions.
• Simmer the sauce.
• Add shrimp and cook until heated through.
• Add pasta to the sauce and toss well.
• Sprinkle with fresh parsley.
