Orange Honey Glazed Carrots

Ingredients
1 lb. Carrots
2 oranges
¾ c. orange juice
2 tbsp. unsalted butter
¼ c. honey
Salt and Pepper to taste
Directions
Peel the carrots and cut into coins. Zest the two oranges using a zester or a microplaner and set aside. Cut the orange into *segments and set aside. In a large sauté pan add the carrots and the orange juice. Bring to a boil and then lower heat and simmer until the carrots are fork tender. Add the honey, orange supreme segments, and the zest.
