Orange Ginger Couscous

Ingredients
1 orange, zested with microplaner
½ c. carrots (brunoise, or very fine diced)
2 roma tomatoes, small diced
1 tbsp. fresh grated ginger
½ tsp. dried oregano
½ tsp. dried thyme
2 tbsp. fresh parsley, finely chopped
1 c. couscous
Salt and pepper to taste
Boiling water
Directions
Combine all ingredients, except salt and pepper, in a mixing bowl. Cover the ingredients with just enough hot water to soak all the couscous. Wrap the mixing bowl with plastic. Steam for 15 minutes. Uncover, fluff with a fork, and salt and pepper to taste. Excellent served with Toasted Walnut, Orange, And Cucumber Salad served over it.
