Orange Fritters

Ingredients
Zest from 1 Paramount Citrus orange
1 ½ cups flour
¾ cups water
1 tablespoon butter, melted
1 ounce yeast
½ teaspoon salt
1 cup frying oil
SYRUP
Juice from 2 Paramount Citrus oranges
Juice from ½ Paramount Citrus lemon
1 ¾ cups granulated sugar
1 cup water
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• Juice half of a lemon with a citrus reamer or juicer; set aside.
• In a medium sauce pan, whisk together all syrup ingredients.
• Boil for 15 minutes until the syrup thickens and set aside.
• In a large bowl mix flour, yeast, melted butter and salt.
• Gradually add water and stir well until the flour absorbs the liquid to form a dough.
• Let the dough rest at room temperature for 1 hour to get puffy.
• Heat the frying oil in a deep frying pan.
• Form the dough into small balls.
• Fry the balls until golden brown.
• Rest the fritters on a paper towel until towel absorbs the oil.
• Dip the fritters in syrup to coat them, then in a serving dish once they absorb the syrup.
