Orange Cranberry Pancakes VegetarianQuick

Ingredients

zest from 1 Paramount Citrus orange
juice from 3 Paramount Citrus oranges
fresh Paramount Citrus orange slices
3 eggs
1 cup low-fat milk
2 tablespoons granulated sugar
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup dried cranberries
pinch of salt and vanilla extract to taste
3 tablespoons melted butter
powdered sugar and syrup for serving

Directions

• Zest an orange using a zester or a fine grater; set aside.
• Juice three oranges with a citrus reamer or juicer; set aside.
• In a medium bowl, whisk together eggs, milk, fresh orange juice and orange zest and set aside.
• In another bowl, whisk together sugar, flour, baking powder, baking soda, cranberries, salt and vanilla extract to taste.
• Stir the egg mixture slowly into the flour mixture.
• Whisk together until blended well.
• In a large skillet, melt butter.
• Measure 1/4 cup of batter for each pancake.
• Pour batter gently to a round shape in the skillet.
• Cook over medium-low heat until each side gets golden brown.
• Serve with syrup, powdered sugar and fresh orange slices.
