Orange Chicken Kabobs

Ingredients
Juice of 2 oranges
1 lb. boneless chicken, cut into cubes
½ lb. button mushrooms
1 red bell pepper, cut into chunks
1 onion, quartered
2 tablespoons extra virgin olive oil
2 tablespoons butter milk
1 tablespoon tomato paste
1 tablespoon dried oregano
1 teaspoon curry powder (optional)
1 teaspoon ground black pepper
Salt to taste
Directions
• Juice two oranges with a citrus reamer or juicer; set aside.
• In a large bowl, mix fresh orange juice, olive oil, milk, tomato paste, oregano, curry, black pepper and salt to taste.
• Marinate chicken with the sauce.
• Cover and refrigerate overnight.
• Thread chicken cubes on skewers alternating with onion, green pepper pieces and mushrooms.
• Grill, turning skewers occasionally until both sides are cooked and chicken is tender.
