Orange Cake

Ingredients
CAKE
juice from 1 Paramount Citrus orange
zest from 1 Paramount Citrus orange
2 eggs
½ cup granulated sugar
1 tablespoon baking powder
1 cup flour
½ cup raisins
½ walnuts, crushed
SYRUP
juice from 2 Paramount Citrus oranges
zest from 1 Paramount Citrus orange
3 tablespoons granulated sugar
Directions
• Preheat oven to 375°F.
• Zest two oranges using a zester or a fine grater; set half aside for cake and reserve the other half for syrup.
• Juice three oranges with a citrus reamer or juicer; set the juice of one orange aside for the cake and reserve the remainder for syrup.
• In a medium saucepan, whisk together syrup ingredients, boil and simmer for 2–3 minutes; set aside.
• In a large bowl, mix eggs and sugar with an electric or hand mixer.
• Add orange juice and orange zest.
• Add baking powder and flour slowly; mix well.
• Add raisins and walnuts; mix well.
• Pour the cake mixture into a lightly greased 9-inch round oven dish.
• Bake for 35–40 minutes until a toothpick inserted into the middle of the cake comes out clean.
• Let the cake cool for 5 minutes.
• Cut the cake into pieces.
• Pour the syrup over the cake and serve.
