Orange Beef or Lamb Kabobs

Ingredients
juice from 6 Paramount Citrus oranges
2 Paramount Citrus oranges, supremed* and cut into cubes
1 lb. grilling steak or lean lamb, cut into cubes
1 tablespoon olive oil
1 hot chili pepper, minced
3 onions, quartered
2 green peppers, cut into chunks
salt to taste

Directions
• Juice six oranges with a citrus reamer or juicer; set aside.
• Supreme two oranges.* Cube segments and set aside.
• Place the meat in a large bowl.
• Pour fresh orange juice over meat.
• Mix with olive oil, salt, chili pepper and orange cubes.
• Refrigerate marinated meat overnight.
• Remove meat and orange cubes.
• Thread meat cubes on skewers, alternating with onion quarters, green pepper and orange cubes, starting and finishing with a piece of orange.
• Grill, turning occasionally, until cooked to your preference.
