Orange And Sundried Tomato Vinaigrette

Ingredients
Zest and juice of 6 oranges
1 c. white wine vinegar
1 qt 16 oz. olive oil
6 Shallots, finely chopped
20 oz. coarsely chopped sundried tomato
Salt and pepper to taste
Directions
Mix together zest, juice, and vinegar. Slowly drizzle in oil while whisking constantly. Stir in shallots and sundried tomato. Season to taste. Excellent served over salad or a Citrus Goat Cheese Caponata Amuse.
