Orange and Fig Cake

Ingredients
CAKE
6 dried figs
1 cup walnuts, crushed
1 cup sugar
1 cup flour
2 eggs
1 teaspoon baking powder
SYRUP
Juice from 3 Paramount Citrus oranges
¼ cup sugar
CREAM
1 egg
3 tablespoons flour
4 cups milk
3 tablespoons sugar
1 tablespoon butter
Directions
CAKE
• In a large bowl, whisk together sugar and eggs
• Add flour and baking powder and using a spatula mix to combine
• Add walnuts and fig
• Pour batter into a lightly greased baking dish
• Bake at 320°F until a toothpick inserted in the center comes out clean.
SYRUP
• Juice three oranges with a citrus reamer or juicer; set aside.
• Whisk together syrup ingredients and set aside.
CREAM
• In a sauce pan, combine milk and all cream ingredients.
• While whisking cook over medium-low heat until the cream thickens.
• Let cake cool for 3-5 minutes.
• Pour syrup over the cake.
• Spread the cream on top.
• Refrigerate 2 hours and serve.
