Orange and Carrot Noodles

Ingredients
Zest from 1 Paramount Citrus orange
Juice from 1 Paramount Citrus orange
1 package rice noodles, (about 8 oz), cooked and drained
2 tablespoons olive oil or butter
2 carrots, sliced
1 medium potato, diced
2 green onions, sliced
2 tablespoons soy sauce
1 teaspoon sesame seeds, toasted
Salt and pepper to taste
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• In a large sauce pan, heat olive oil and sauté carrots and potato for about 5 minutes until vegetables start to soften.
• Add green onions, soy sauce and sesame seeds and stir well.
• Add orange juice, orange zest and bring to a boil.
• Add rice noodles and cook for an extra 2-3 minutes.
• Season with salt and pepper to taste and serve warm.
