Orange Almond Marmalade

Ingredients
6 Paramount Citrus oranges
2 ½ cups sugar
20 almonds, peeled
½ cup water
Directions
• Wash oranges well and pat dry.
• Using a vegetable peeler, peel the oranges. Discard any white pith and pits.
• Slice the peels of 2 oranges as thin as possible and save the peels of remaining 4 oranges for the Chocolate Dipped Orange Peels.
• Quarter the oranges and discard the seeds.
• Puree the oranges in a blender.
• In a small saucepan, combine ½ cup water and almonds and simmer over low heat for 10 minutes and drain.
• Using a knife, halve the almonds.
• In a large pot, combine orange puree and sugar, cook over medium heat, stirring occasionally for about 30 minutes.
• Add almonds and boil for an extra 5 minutes.
• Pour into glass jars and cool uncovered.
• Cover the lid and seal firmly.
