Orange Almond Drop Cookies

Ingredients
zest from 1 Paramount Citrus orange
juice from 2 Paramount Citrus oranges (1/2 cup)
¾ cup butter
¾ cup granulated sugar
2 eggs
2 cups all-purpose flour
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup almonds, chopped
Directions
• Preheat oven to 375°F.
• Zest an orange using a zester or a fine grater; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• In a large bowl, cream butter with sugar and add the eggs into this mixture.
• Meanwhile, in another bowl, mix together flour, vanilla powder, baking powder, baking soda and orange zest. Stir in fresh orange juice.
• Gradually add flour mixture to egg and sugar mixture.
• Stir in almonds and mix well to combine.
• Drop by teaspoonful, placing them 2 inches apart from each other on a lightly greased cookie sheet.
• Bake for 10–15 minutes until cookies are golden brown.
