Orange Almond Couscous VegetarianQuick

Ingredients

½ Paramount Citrus orange supreme segmented* and cut into cubes
2 tablespoons olive oil or butter
2 cups couscous
2 cups of vegetable or chicken broth
1 bunch green onions, sliced
½ cup frozen peas, thawed
2 tablespoons slivered almonds, roughly chopped
DRESSING
Zest from 2 Paramount Citrus orange
Juice from 1 Paramount Citrus orange
1 tablespoon white wine vinegar
3 tablespoons olive oil
2 cloves garlic, crushed
2 tablespoons fresh dill, chopped
Salt and pepper to taste

Directions

• *Supreme segment half of an orange. Cube segments and set aside
• Zest two oranges using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• In a large skillet with high sides, heat olive oil and toast couscous for 2-3 minutes.
• Add broth and simmer covered for about 8-10 minutes.
• Remove couscous from heat.
• Meanwhile, to prepare the dressing whisk together all dressing ingredients and set aside.
• In a large bowl, mix couscous, green onions, orange and peas.
• Toss with dressing, season with salt and pepper.
• Top with almonds just before serving.
