Moroccan Chicken Soup

Ingredients
juice from 1-1/2 Paramount Citrus oranges
2 tablespoons butter or olive oil
4 cloves garlic, minced
1-1/2 onions, diced
1 carrot, diced
1/2 tablespoon cumin
6 cups chicken broth
salt and pepper to taste
1 can garbanzo beans, drained (optional)
2 tablespoons fresh parsley, chopped
Directions
• Juice one and a half oranges with a citrus reamer or juicer; set aside.
• In a large pot, melt butter and sauté garlic, onion and carrot with cumin for 3–5 minutes.
• Add chicken broth, salt and pepper to taste.
• Bring to a boil.
• Add orange juice slowly, stirring constantly.
• Add garbanzo beans and cook for 5–10 minutes.
• Garnish with fresh parsley and serve.
