Lemon Zucchini Patties

Ingredients
Juice from 2 Paramount Citrus lemons
2 eggs
4 medium zucchini, grated
½ onion, diced
3 green onions, chopped
½ cup fresh parsley, chopped
½ cup feta cheese
1 tablespoon black pepper
Salt to taste
1 cup flour
Oil for frying
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large bowl, beat eggs and mix together zucchini, onion, green onions, fresh parsley, feta cheese, fresh lemon juice, salt and black pepper.
• Add flour slowly and mix until evenly blended into the zucchini mixture.
• Pour 1 tablespoon of the mixture into hot frying oil and fry each side until crispy and golden brown.
• Line a plate or a tray with paper towels.
• Heat a large, heavy skillet with 2 inches of oil to deep fry.
• Fry each side until crispy and golden brown. Remove and let rest on paper towels to remove excess oil.
• Before serving remove paper towels from the plate.
