Lemon Yogurt Dip

Ingredients
juice from 2 Paramount Citrus lemons
2 cups plain nonfat yogurt
1 cucumber, grated
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh mint, chopped, or 1 teaspoon dried mint
salt to taste
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a medium bowl, whisk all ingredients together until smooth.
