Ingredients

zest from 1 Paramount Citrus lemon
juice from 1 Paramount Citrus lemon
1 egg
1/2 cup butter or margarine, melted
1 cup granulated sugar
1/4 teaspoon salt
1/2 cup walnuts, crushed
2 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder

Directions

• Preheat oven to 375°F.
• Zest a lemon using a zester or a fine grater; set aside.
• Juice the lemon with a citrus reamer or juicer; set aside.
• In a large bowl, beat egg with butter and sugar.
• Add salt, fresh lemon juice, lemon zest and crushed walnuts.
• Slowly add flour, baking soda and baking powder to make a dough.
• Refrigerate dough for 1 hour.
• On a lightly floured surface, roll dough out to a 1/8-inch-thick rectangle.
• Cut into shapes with a cookie cutter.
• Place cookies on a lightly greased baking sheet.
• Bake for 10–15 minutes until golden.
• Let cool on a wire rack before serving.
