Lemon Tarragon Vinaigrette

Ingredients
1/3 c. Lemon juice
1 sp. Honey
1 clove crushed or finely minced garlic
1 tsp. Dijon mustard
1 tbsp. finely chopped fresh tarragon
½ tsp. dried parsley
1/3 c. extra virgin olive oil
1/3 c. canola oil
Salt and pepper to taste
Directions
In a mixing bowl combine lemon juice, honey, garlic, Dijon mustard, tarragon, and parsley. While whisking vigorously, slowly drizzle in oil. Salt and pepper to taste.

This dressing is very light and lemony. I cut back on the oil and mixed it with my hand-held food processor. Served it over salad greens with poached shrimp. Very nice guest reviews.
