Lemon Spinach Soup

Ingredients
juice from 4 Paramount Citrus lemons
1 tablespoon olive oil
½ onion, diced
1 tablespoon tomato paste
1 bunch spinach, chopped
3 cups chicken or vegetable broth
1 teaspoon dried thyme, crumbled
2 tablespoons rice, uncooked
salt and pepper to taste
Directions
• Juice four lemons with a citrus reamer or juicer; set aside.
• In a medium pot, sauté onion with olive oil and tomato paste.
• Add spinach and sauté for an extra 1–2 minutes.
• Add broth, fresh lemon juice and dried thyme; stir well.
• Bring soup to a boil.
• Add rice and cook for an extra 10–15 minutes over medium-low heat until rice is cooked.
• Sprinkle with salt and pepper to taste.
• Serve hot.
