Lemon Quinoa Salad

Ingredients
SALAD
1 cup quinoa, rinsed
2 cups vegetable stock or water
1 can garbanzo beans, drained
½ cup fresh mint, chopped
½ cup red onion, finely chopped
½ cup green pepper, diced
DRESSING
juice from 2 Paramount Citrus lemons
zest from 1 Paramount Citrus lemon
1 large clove garlic, minced
3 tablespoons extra virgin olive oil
¼ cup tahini
2 tablespoons water
salt and pepper to taste
Directions
SALAD
• In a saucepan, boil the quinoa with stock or water.
• Reduce heat and simmer until all liquid is absorbed (about 10-15 minutes).
• Remove from heat and allow to cool.
• In a large bowl, mix the quinoa with remaining salad ingredients.
DRESSING
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• Mix all dressing ingredients well, except for water.
• Add 2 tablespoons water slowly to thin the sauce.
• Sprinkle with salt and pepper to taste.
• Add half the dressing to the salad and toss. Taste and add more as necessary.
• Serve the salad with the remaining dressing in a dish at the table.
