Lemon Potato Puree

Ingredients
Juice from 3 Paramount Citrus lemons
2 lbs. russet potatoes
4 tablespoons butter
½ cup buttermilk
½ cup mozzarella cheese, grated
Salt and pepper to taste
Directions
• Juice three lemons with a citrus reamer or juicer; set aside.
• In a large pot, boil potatoes until soft.
• Drain and let them cool.
• Peel the potatoes and mash them in a large bowl.
• In a large skillet melt butter and add mashed potatoes, cook for a few minutes.
• Add butter milk and fresh lemon juice slowly.
• Mix well stirring constantly until the potatoes absorb the liquid.
• Cook for a few more minutes.
• Sprinkle with cheese, salt and pepper to taste and serve warm.
