Lemon Potato Croquettes

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 2 Paramount Citrus lemons
1 lb. Yukon gold potatoes, boiled and mashed well
1 onion, diced
2 cloves garlic, minced
1 teaspoon crushed red pepper
2 teaspoons black pepper
½ cup mozzarella cheese, grated
1 egg, beaten
¼ cup parsley, chopped
¼ cup flour
Salt to taste
Flour to coat
Oil for frying
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large bowl mix together first 12 ingredients.
• Form potato mixture into medium size croquettes.
• Coat each ball with flour and fry until golden brown.
• Heat a large, heavy skillet with 2 inches of oil to deep fry.
• Fry each side until crispy and golden brown.
• Remove and let drain on paper towels to remove excess oil and serve immediately.
